We have carried coffees from the Paguaga family since 2018. Ramon started the first family farm in 1976, and his sons Sergio & Norman have been involved since a young age. This coffee is a selection of the best coffees from the family’s holdings at Finca Ventaja & Finca San Judas. It is very hard to dry coffee properly in this part of Nicaragua because it is very humid, so our exporting partner Caravela buys wet parchment- after it has been fermented and washed but before it is dried- and dries it on raised beds until it has a stable moisture content and is ready for rest & export. We get tons of fleshy stonefruit, bright citrus & florals in this coffee. There’s a pleasant caramel quality and long sweet finish.
