COFFEE STORY.
We have been purchasing coffee from Northern Peru in the Cajamarca region since we started roasting in 2013. Most of these coffees are balanced around chocolate and caramel, and we occasionally get something with some dark fruit- think plum. Our partners at Caravela started sorting out coffees from around Cutervo 3 years ago and the coffee coming out of this area is unlike any Peruvian coffee we’ve had before, despite being similar varieties and similar elevation. The producers in this area- who we had the opportunity to visit in September 2022- ferment their coffee dry for what they call “2 nights and 2 days”- around 40 hours. This leads to the best coffees from the area being much more complex and fruit forward - and to be transparent, lesser examples being vinegary and ferment-y. We are featuring 2 lots from Ukuku this year, this is the larger lot that is a blend of coffees that score over 84.75- 85.5 points. It is not as bright as the reserve lot we will feature this summer, but it does have big juicy cherry and citrus notes, with a mild nuttiness and tons of sweetness.
